中心的格子可以放毛肚、鴨腸、黃喉、肥牛,用來燙容易熟的肉類,火旺油溫高,滾燙30秒讓食材口感爽脆。旁邊的大格可以下鍋煮香腸、麻辣牛肉、海帶、金針菇、藕片、土豆、萵筍、肉丸、魚、蝦滑等需要煮一段時間才能完全熟的食材。邊上的小格可以煮鵪鶉蛋、魷魚、肥腸等等,起到一個小火慢慢煮,使得食材更軟糯,完全入味的作用。
